Farm cheese

Every cheese made on the farm is special! The milk comes from one herd of cows. The weather and the seasons influence the fat and protein contents of the milk. Every farmer also has his own recipe and method of preparing cheese. Those are differences you can taste!

Farmer's cheese is made from milk that has not been pasteurized (as is done in the cheese factory). Some farmers choose to thermalize their cheese. Thermization is a light heat treatment of the milk; above 40°C, but below 72°C. This cheese is then called 'Cheese from the farm'.

The 'Boer Jaap' is the highlight of the market! You will recognize this large cheese by its green rind and large size. A whole 'Boer Jaap' easily weighs 30 kilos! Because this cheese is so large (a regular cheese weighs only 12 kilos), the cheese ripens slowly and remains nice and creamy. Creamy and spicy! No wonder we always present this cheese in a grand manner in our stall!
